Genius is an artisan bakery specialising in Gluten free produce. Food lover and mum Lucinda Bruce-Gardyne wanted to “create the perfect fresh gluten-free loaf” when she found out that one of her children had severe gluten intolerance. There’s nothing like the simple pleasure of dunking toast soldiers into a runny boiled egg or tucking into your favourite homemade sandwich. Lucinda didn’t want her little boy to miss out on these things. After spending years in the kitchen working on it, she finally found the perfect recipe, which led to Genius bread, and a fresh approach to gluten free.
