A little taste of Nolan’s in November...

 

Clocks have gone back, festive lights are on the horizon and hopes of that Indian summer are but a memory.  So, it’s that time of year when we turn to winter warmers and this month we’ve got a couple of our favourites for you, ingredients for which you’ll find in-store...

So, with this in mind, we’ve selected a couple of our favourite recipes using these ingredients for you to enjoy.

Cottage Pie

 

 

 

Cottage Pie

Ingredients

450g/1lb potatoes, scrubbed
1 small onion, finely chopped
1 stick celery, finely chopped
1 carrott, finely chopped
1 tbsp tomato puree
1 clove garlic, crushed
600g/1.5lb minced beef
50ml beef stock
2 tbsp milk
25g/1oz butter
Salt, black pepper
25g/1oz grated cheese


To cook
Bring potatoes to the boil, simmer for a further 15mins or until tender

Drain and peel, leave to stand.
Heat oil in a pan and add celery, garlic and onion and sautee for 3-4mins, just enough to soften
Add the mince and cook for 3-4mins, or until browned and add the tomato puree and stock before cooking for a further 10-12mins, seasoning to taste if required.
Transfer beef to a casserole dish.
Heat the milk, add the butter and mash in the potatoes (or sieve) to a smooth consistency and spread or pipe the mix on top of the beef in the casserole dish.
Sprinkle the grated cheese on the top
Bake in a pre-heated 190c/gas mark 5 oven or 12-15mins or until potato has browned.

Make it special
Add a half glass of red wine in place of the beef stock

 

BREAD & BUTTER PUDDING

 

 

Bread & Butter Pudding

Ingredients
8-10 slices white bread, crusts removed
500ml milk
2 eggs
50g/2oz caster sugar
50g/2oz sultanas
Pinch ground nutmeg
Butter


To cook
Butter each slice of bread, cut into triangles
Grease an ovenproof dish and place a first layer of bread, buttered side down
Sprinkle some sultanas and pinch nutmeg on top
Repeat with a second later of bread, sultanas and nutmeg
Add a final layer, buttered side up
Beat the eggs, adding the milk and sugar and pour over the dish.
Stand for 10mins and transfer to a pre-heated oven, 180c/Gas mark 4 for 25-30mins or until “set”

Serve
Custard, cream or ice-cream – best served straight from the oven

Make it special
Replace sultanas with alternative fruits such as berries or cherries
